8. Panzanella

When the temperature start to increase, it means only one thing: salad for dinner, an essential recipe of summer for anyone.  Panzanella is a typical dish of the Tuscan tradition, a cold salad of stale dried bread cut into small pieces, tomatoes, cucumbers, red onion, basil, salt, pepper, vinegar and extra virgin olive oil. There is also a Lazio variant, which the bread isn’t cut, a sort of bruschetta but based on old bread.

9. Friselle with tomatoes

An Apulian summer dish can only be Friselle with fresh tomatoes, a type of twice-baked bread based on durum wheat flour, water, salt and yeast. Friselle are usually consumed as a single meal,  often served very simply, topped with chopped tomatoes and fresh basil, extra virgin olive oil and seasoned with sea salt. The origins of Friselle date back around the 10th Century, eaten especially by merchants who were out months at sea, sailing to reach distant markets.
